Tiramisu
Serves 8-10
INGREDIENTS
- 3 large eggs, separated
- 1 1/2 Tbsp sugar
- 8 ounces Mascarpone cheese, room temperature
- 2 Tbsp Kahlua liquer
- 1 tsp vanilla extract
- 1 cup or more very strong coffee, cooled
- 2 8oz packages crisp lady fingers
- 4 oz bittersweet chocolate, grated
DIRECTIONS
- In a large bowl, beat egg yolks and sugar until light yellow, about 1 minute.
- Beat in Mascarpone, Kahlua and vanilla extract until smooth.
- In a separate bowl, beat egg whites until stiff, but not dry.
- Gently fold stiff egg whites into cheese mixture, set aside.
- Pour coffee into a small shallow bowl.
- Dip lady fingers in coffee one at a time and arrange in the bottom of a glass 9x9" baking pan making a single layer.
- Spread half the cheese mixture over the layer of ladyfingers.
- Sprinkle with half the grated chocolate.
- Repeat layer of coffee dipped ladyfingers, refilling coffee as needed, followed by the rest of the cheese mixture and ending with the chocolate.
- Cover pan TIGHTLY with plastic wrap and place in the refrigerator for at least 4 hours or up to 8 to allow the ladyfingers to soften.
NOTESTiramisu means "pick me up" in Italian and this is one of my most requested recipes. Mascarpone is a soft double cream Italian cream cheese. You can find it in most grocers cheese cases. Make sure to look for the crisp ladyfingers, the soft sponge kind just wont work for this dish. To make this dish more adult, replace half the coffee with more Kahlua or brandy. Recipe by Scott Neuse
