Chicken Kabobs With Chili Lime Marinade
Serves 4 people
Ingredients
- Skewers
- 1 lb. boneless, skinless chicken breasts
- 1 Tbsp. sesame oil
- 3 Tbsp. olive oil
- 2 Tbsp. red wine vinegar
- 2 limes juiced
- 2 tsp. chili powder
- 1 tsp. paprika
- 3 cloves of garlic finely chopped
- 5 green onions finely chopped
- cayenne pepper to taste
- salt and pepper to taste
Directions
- Cut the chicken into 1 1/2 inch bite size pieces and place in a shallow baking dish.
- In a bowl combine the oils, vinegar, lime juice, chopped garlic, chopped onions and add the seasonings.
- Pour the marinade over the chicken.
- Cover with plastic wrap and refrigerate for at least one hour.
- Preheat your grill to medium-high.
- While grill is heating thread 3 to 4 pieces of the chicken on to the skewers.
- Grill the chicken skewers for about 15 minutes or until the juices run clear.
Notes
Remember to soak the skewers in water for at least 20 minutes before putting them on a grill. If you have left over skewers allow them to dry out before you store them again in plastic.
If you don't have fresh garlic or onion you can use the powders but remember to use less. For herbs in general the rule is use 1 tsp. of a dry herb in lieu of 1 Tbsp of fresh.
