Chicken Rolls
Serves: 4 people as a meal or 8-10 as an appetizer
Ingredients
- 4 small to medium boneless skinless, breast, (chicken, turkey, or duck)
- 1 lb. medium sized bacon slices
- 4 oz. pickled jalapenos
- 1 red pepper, julienne
- 1 yellow pepper, julienne
- steak seasoning (i.e. Mrs. Dash’s original or extra spicy)
Directions
- Tenderize the breast to ¼” thickness by pounding with a mallet. It is important to tenderize the duck.
- Add diced jalapenos and julienned strips of peppers to the center length of the poultry breast.
- Fold or roll the breast lengthwise.
- Tightly wrap the whole roll with overlapping slices of bacon. Tuck bacon into ends of the roll. Use toothpicks to secure if necessary.
- Season with Mrs. Dash or your choice of seasoning.

Cooking Options:
- Basket in rotisserie for 25 minutes.
- Grill over medium heat using a basket or lay directly on the grate taking care to keep rolls intact.
- Roast in 350?F oven for 20 minutes. Finish by crisping bacon under the broiler for 1 minute on each side.
- Let rolls stand for 10 minutes to cool before cutting. Slice into ¼” thick slices to serve.
