Curried Chicken Salad

Curried Chicken Salad

Serves: 6 people

Ingredients

  • 1 1/2 lbs cooked skinless boneless chicken
  • 2 celery stalks, finely chopped
  • 1 cup seedless red grapes, halved
  • 1/2 cup mayonnaise
  • 1/3 cup plain yogurt
  • 5 tsp curry powder
  • 1 Tbsp fresh lime juice
  • 1 tsp honey
  • 1/2 tsp ground ginger
  • 1/2 tsp salt, to taste
  • 1/4 tsp black pepper, to taste
  • 1 medium red onion, finely chopped (1 cup)
  • 1/2 cup salted, toasted cashews or almonds, chopped

Directions

  1. Cut cooked chicken into 1/2 inch pieces or shred per your preference.
  2. Whisk together mayonnaise, yogurt, curry, lime juice, honey, ginger, salt, and pepper in a large bowl.
  3. Add chicken, onion, grapes (or raisins), and cashews. Stir gently to combine.
  4. Chill in refrigerator until ready to serve.
