Tomato and White Bean Salad
Serves: 4
INGREDIENTS
- Combine in a large bowl 2 pints of cherry tomatoes halved
- 2 cloves of garlic minced
- 2 Tbsp capers
- 1/4 cup olive oil
- 2 Tbsp red wine vinegar
- 1/2 medium red onion thinly sliced
- 5 large leaves of basil juliened
- salt & pepper to taste
- 1 can of drained white beans
DIRECTIONS
- Combine all of the ingredients except the beans and marinate to blend flavors for about 1/2 hour in refrigerator.
- Add the beans combine and serve.
NOTES
There are several other things you could do to this salad. You can add Feta or Tuna to make it a heartier dish. Recipe by Scott Neuse
