Tomato and White Bean Salad

Tomato and White Bean Salad

 

Serves: 4

INGREDIENTS

  • Combine in a large bowl 2 pints of cherry tomatoes halved
  • 2 cloves of garlic minced
  • 2 Tbsp capers
  • 1/4 cup olive oil
  • 2 Tbsp red wine vinegar
  • 1/2 medium red onion thinly sliced
  • 5 large leaves of basil juliened
  • salt & pepper to taste
  • 1 can of drained white beans

 

DIRECTIONS

  1. Combine all of the ingredients except the beans and marinate to blend flavors for about 1/2 hour in refrigerator.
  2. Add the beans combine and serve.

NOTES

There are several other things you could do to this salad. You can add Feta or Tuna to make it a heartier dish. Recipe by Scott Neuse
