Green Goddess Dressing

Green Goddess Dressing

Yields: 2 cups

Ingredients

  • 1 clove garlic
  • 1, 8 oz. cup white wine vinegar
  • ¼ cup (or less) salad oil
  • 1 oz. anchovy paste or ½ tin anchovy filets
  • 1 medium or large ripe avocado
  • 2 Tbsp mayonnaise or yogurt
  • ½ cup chopped green onion tops

Directions

  1. Combine all ingredients in a food processor and process until creamy.
  2. Chill.
  3. Serve over a fresh garden salad or serve as a dip.
