Chilled Avocado and Cilantro Soup

Chilled Avocado and Cilantro Soup

Serves 4

Ingredients

  • 4 ripe avocados, peeled, pitted and diced
  • 1 shallot chopped
  • 3 1/2 cups of vegetable broth
  • 4 Tbsp. fresh lemon juice
  • 1/4 cup fresh cilantro chopped
  • 1 tsp. cumin
  • 1/2 tsp. cayenne pepper
  • 2 Tbsp. sour cream
  • 2 Tbsp. olive oil
  • 1 Tbsp. tequilla (optional)
  • Extra chopped cilantro for garnish
  • Extra sour cream for garnish

Directions

  1. Combine all of the above ingredients in a large food processor and puree.
  2. Pour pureed soup into a bowl or pitcher and chill in the refrigerator.
  3. Pour into bowls when chilled and garnish with the a dollop of sour cream and sprinkle with the chopped cilantro.

Notes

You may want to add a few drops of  Tabasco sauce for an extra kick. This is a thick creamy chilled soup that is quite refreshing. You can pour this into a white rimmed soup bowl with a chilled carrot and yogurt soup for a lovely presentation of two fabulous soups and their glorious colors. Pour the two soups from pitchers at the same time. The soups are thick enough to remain  separated in the bowl. Garnish these as you would the avocado soup.
