Chilled Cucumber Soup

Chilled Cucumber Soup

 

Serves 6

Ingredients

  • 4 cucumbers peeled, seeded and chopped
  • 1 cup plain yogurt
  • 1/3 cup sour cream
  • 1/2 cup of water
  • 1/2 tsp. English style dry mustard
  • 1/4 cup of fresh dill sprigs chopped
  • 1/4 tsp. cumin
  • 2 cloves garlic chopped
  • 1/4 tsp. salt
  • 1/4 tsp. white pepper

Directions

  1. Put all the ingredients in a blender or food processor and puree.
  2. Transfer to a bowl or pitcher and chill in the refrigerator for at least six hours.
  3. When appropriately chilled pour into bowls and garnish with a sprig of fresh dill.

Notes

Cold soups on a hot summer day are refreshing and cooling. The longer this soup has to chill the better it will taste as the flavors blend. You can adjust the spices as you like to your own taste. If you like it hot add cayenne pepper or a chopped jalapeno. Ole!
