Chilled Tomato Basil Soup

Chilled Tomato Basil Soup

Serves 4

Ingredients

  • 2 lbs of fresh ripe tomatoes
  • 10-15 large leaves (bunch) of basil chopped
  • 2 cups of vegetable stock
  • 3 cloves of garlic chopped
  • 2 Tbsp. olive oil
  • 2 Tbsp. of red wine vinegar
  • salt and pepper to taste

Directions

  1. Score the bottom of the tomatoes with an X and plunge them into boiling water for about a minute. Remove them and peel them.
  2. Cut the tomatoes in half, squeeze out the seeds and chop.
  3. Put the garlic, olive oil, and basil in a food processor and puree.
  4. Add the tomatoes and the vegetable stock to the basil, olive oil and garlic puree.
  5. Pour entire mixture into a saucepan and gently heat.
  6. Pour soup into a bowl or a pitcher and chill in the refrigerator.
  7. Pour into bowls after chilled and garnish with whole basil leaves.
