Gazpacho

Gazpacho

 

Serves 8

Ingredients

  • 4 large ripe tomatoes chopped
  • 2 cucumbers, peeled, seeded and chopped
  • 5 green onions chopped
  • 1 small red onion chopped
  • 1 green pepper chopped
  • 1 red pepper chopped
  • 2 stalks of celery chopped
  • 4 cloves of garlic
  • 1/4 cup of  parsley chopped
  • 1/4 cup of chives chopped (garnish)
  • 1/3 cup of olive oil
  • 1/3 cup of red wine vinegar
  • 2 Tbsp. fresh lemon juice
  • 1 tsp. cumin
  • salt & pepper to taste
  • Worchester sauce to taste
  • 4 cups of tomato, vegetable or V8 juice

Directions

  1. In a blender or food processors and in batches if necessary to accomodate volume, combine the above ingredients and blend to your desired consistency.
  2. Pour the soup into a non-metal storage container and refrigerate overnight allowing flavors to blend. 
  3. Serve cold with some crunchy croutons sprinkled on top or garnished with chives.

Notes

Gazpacho is a traditional summer soup served refrehingly cold. It is a healthy and nutritious meal that tastes like summer in a bowl.

This soup is so easy to make and keeps well in the fridge for several days. It gets better with age actually.

It is perfect for hot summer days and nights.
